This is one of my favorite lunches. It combines whatever you have as leftovers. I like a stir fry or salmon and rice. Top with any thinly sliced veggies. Pictured here is cucumbers, baby carrots, cilantro and green onions. I sprinkle some dried mint and black sesame seeds top with some Kweepie Mayo. I forgot my red peppers and avocado but there's always tomorrow. I make extras which sb eaten up quickly as it has salmon in it. After rolling up a bunch, I put them in a container and make sure they are not touching each other. Then I cover them with a damp paper towel to prevent them them from sticking to each other and from drying out.
