Sushi Casserole Recipe and details

Ingredients required:

Camrose sushi rice- rinsed in cold water
Rice Vinegar, 1 tablespoon per cup of rice
Sugar, 1 tsp per cup of rice
Prepare Rice as you normally would but once cooked add Rice Vinegar and sugar.
Let rice cook for several hours

Shrimps cooked and cut thinly
goberge cut into small pieces , added to cut up greens of shallots in a bowl with mayo and sour cream to your taste. Not too wet
smoked salmon

avocado cut thinly
carrots and cucumber, grated and water drained from cuc's
scrambled egg added to cut up greens of shallots in a bowl with mayo and sour cream to your taste. Not too wet

Nori sheets (i prefer the small square ones bought at Costco)
sesame seeds, added to each layer
wasabi, you could add this to the mayo but I let people add their own at the end.

Assemble by adding rice with wet hands and a bowl of water to keep the rice from sticking to your hands.
add the first layer of rice and add smoked salmon. Sprinkle with sesame seeds. add Nori and press.
continue next layer with rice, add carrots and then sprinkle with sesame seeds and Nori and press
continue until you have used everything on each layer.
Experiment with different things. You don't need to make it with all the different layers that I do.
Have fun and make your own the way you like it.
cover with plastic wrap and refrigerate for several hours and cut into small square and serve with wasabi and soya sauce

End of a collection #Breweriana

 For years my hubby and I collected Breweriana items. It started with beer glasses and within a year or two without realizing it, we had over 100 displayed in our A frame window ledge. Then it was coasters from every bar or restaurant we visited. The next level was Beer trays which we eventually sold off. This all started when we were making our own beer even managed to find the old quart size bottles and the cases. As with most collections it grows without even noticing. You know it's out of control when you need to clean over 100 glasses, twice a year. We still pick up glasses, coasters and trays here and there but more for reselling. This is the last bit of the collection that we no longer display and all the coasters have a pin hole as they were mounted in our basement on our barn wood walls.
